New Year’s Dinner

New Year’s Dinner, Seared Scallops on Shrimp and Truffle Risotto. with oven-roasted asparagus. A glass of cava as the celebratory drink of choice.

A couple substitutions: thinly sliced scallions for chives, and truffle-infused olive oil for the pure truffle oil.

Verdict: super tasty, one of my favorite preparations of risotto I’ve ever made. I would totally make it again!
