Smoky Pork & White Bean Stew from Cook’s Country ★★★

This was just alright, felt like it could be more smoky and stew-like. I used fire-roasted tomatoes, but it still wasn’t smoky enough for my tastes.

For next time, try:

  • Browning the meat in batches to get more of a maillard reaction
  • Adding tomato paste to thicken
  • Starting from dry beans instead of canned
