Baked Eggs in Piperade ★★★★
This is somewhat like Shakshouka, or Eggs in Purgatory! I made this using the leftover Piperade from the Toro Bravo recipe, and baked an egg in it. This simply involved warming up some of the Piperade, nestling an egg inside, and baking till my desired doneness. Topped with fresh ground pepper, sea salt, and served with some crusty bread for dipping. I had this for breakfast for almost an entire week.
