Creamy Potato, Leek, and Sauerkraut Soup ★★★

This is the creamy cousin to the Kapusniak recipe I tried a while back. There’s no cream in it, but the potato gives it a creamy texture. Even though I normally like creamy/blended soups, I tired of this one a lot faster than the Kapusniak. I think having some crusty bread alongside helps with the texture fatigue. Good flavors, though. Successfully froze and reheated a few weeks later, with no issues.
