Beet Salad and Shrimp Risotto

Two of the main salad ingredients came from our friends at Milk Bark Farm – both the beets and eggs! The risotto is a dish I’ve made many times before; it makes a great side dish or main, depending on the proteins you use (sometimes we do shrimp/prawns, or scallops).
