Thai Pumpkin and Chicken Curry from Life Loves the Curious ★★★★

My traditional Halloween dish (I’m sure I’ve made this every year on Halloween for at least the past 10 years)! Since living in Portland, I’ve used the local brand Thai and True red curry paste as the base.
